Hearty Whole Wheat Pumpkin Bread
2 cups whole wheat flour
1/2 cup wheat germ or ground flax
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. all spice
1/2 tsp. nutmeg
1/2 tsp. pumpkin pie spice
1 cup brown sugar or coconut sugar
1/3 cup canola or olive or coconut oil
3 eggs
1 1/2 cup canned or fresh PURE pumpkin puree (not pie filling)
1/2 cup milk (any kind - cow's milk, soy, almond, coconut, rice)
Optional:
1/2 cup raisins, chopped nuts or chocolate chips
1. Preheat oven to 350. Grease a 9x5 inch load pan.
2. In a large bowl, combine first set of ingredients.
3. In a separate mixing bowl, combine sugar, oil, and eggs and beat until fluffy.
Add the pumpkin, milk and optional ingredients (if using) and stir to combine well.
4. Slowly add the dry ingredients to the pumpkin mixture and mix well.
5. Scrape the batter into a loaf pan. Top with raw pumpkin seeds, flax seeds, sesame seeds or chopped nuts (or a combination of them) if you wish - it is very decorative and crunchy.
6. Bake for approximately 1 hour or until a toothpick inserted into the center comes out clean.
7. Allow to cool for approx. 15 min - loosen sides and turn out onto rack to cool.

4-6 apples (different variety offer different flavours of applesauce - MacIntosh, Gala, Empire, Golden Delicious and Ambrosia are good varieties)

3. Sprinkle a generous amount of cinnamon
4. Add a little brown sugar to taste (it is good without sugar but some people prefer it a little sweetened)
Cook on high until bubbling. Turn down to medium and cover, occasionally mashing apples with a potato masher until apples are broken down (approx. 15 min).
Enjoy warm or cold. Refrigerate the left overs.

Ingredients:
4-6 medium apples - cored, peeled and sliced
(red, sweet apples work best…McIntosh adds some tanginess!)
1/4 cup brown sugar
1/2 tsp. cinnamon
3 Tbs. water
1/2 cup melted butter or margarine
1/2 cup flour (white or whole wheat)
1/2 cup brown sugar or coconut sugar
1/4 tsp. salt
2 cups rolled oats
Preheat oven to 350.
Mix together first amount of brown sugar, cinnamon and water.
Toss the apples in this mixture.
Lay the apples in a 8” or 9” glass pan.
Mix the rest of the dry ingredients together in a bowl.
Add in melted butter and mix until everything is wet.
Put the crumbly topping over the apples and spread out evenly.
Bake at 350 for 20 - 25 minutes until golden brown and when fork is easily inserted into apples.
For variety:
This recipe is delicious served warm with vanilla ice cream.
You can substitute ripe peaches in the summer for peach crisp!
